Ingredients

  • 2 medium ripe bananas, mashed (about 200g / 7 oz)
  • 1 cup natural peanut butter (250g / 8.8 oz)
  • 1½ cups old-fashioned rolled oats (135g / 4.75 oz)
  • 2 tablespoons honey (30ml / 2 tbsp)
  • 2 tablespoons ground flaxseed (14g / 0.5 oz)
  • 1 teaspoon vanilla extract (5ml / 1 tsp)
  • 1 tablespoon chia seeds (12g / 0.4 oz) – optional
  • ½ cup mini chocolate chips (90g / 3.2 oz) – optional
  • ½ teaspoon ground cinnamon – optional

Instructions

  1. Peel and mash the ripe bananas in a mixing bowl using a fork or potato masher until mostly smooth with a few small lumps remain.
  2. Add peanut butter, honey, and vanilla extract to the mashed bananas and stir until combined and smooth.
  3. Mix in the oats, ground flaxseed, chia seeds (if using), cinnamon, and mini chocolate chips (if using) until evenly combined and sticky.
  4. Use a cookie scoop or tablespoon to portion the mixture onto a lined baking sheet. Roll each portion into a tight ball with your hands.
  5. Chill the energy bites in the refrigerator for at least 30 minutes to firm up.
  6. Transfer the chilled bites to an airtight container and store in the fridge for up to 7 days.

Notes

Use very ripe bananas with brown spots for maximum sweetness and moisture. If the mixture is too sticky to roll, add more oats; if too dry, add a splash of milk or more mashed banana. Natural peanut butter is preferred for a balanced flavor. These bites can be customized with nuts, dried fruit, or spices. Freeze leftovers for longer storage.
