- 1 pound raw shrimp, peeled and deveined, tails off
- 1 cup panko breadcrumbs
- ½ cup all-purpose flour
- 2 large eggs, beaten
- Olive oil spray
- ½ cup mayonnaise
- 3 tablespoons sriracha
- 1 tablespoon honey
- 1 teaspoon rice vinegar
- ½ teaspoon garlic powder
- Salt and pepper to taste
- Optional: chopped green onions, fresh cilantro, lime wedges
Instructions
- Prep the shrimp by ensuring they are peeled, deveined, and completely dry. Set up three bowls: one with flour, one with beaten eggs, and one with panko breadcrumbs.
- Coat each shrimp by dipping first into the flour (shake off excess), then the eggs, and finally the panko breadcrumbs. Place coated shrimp on a baking sheet or plate without crowding.
- Preheat the air fryer to 400°F (200°C). Lightly spray the air fryer basket with olive oil spray.
- Arrange shrimp in a single layer in the air fryer basket. Lightly spray the tops of the shrimp with olive oil spray.
- Air fry for 4-5 minutes, flip the shrimp, then air fry for another 4-5 minutes until golden and crispy.
- While shrimp cooks, whisk together mayonnaise, sriracha, honey, rice vinegar, garlic powder, salt, and pepper to make the spicy mayo sauce. Adjust seasoning to taste.
- Once shrimp is done, toss gently with the spicy mayo until evenly coated.
- Serve immediately with optional chopped green onions, cilantro, and lime wedges.
Notes
Pat shrimp dry thoroughly before coating to ensure crispiness. Do not overcrowd the air fryer basket; cook in batches if necessary. Toss shrimp with sauce just before serving to keep coating crunchy. Reheat leftovers in the air fryer at 350°F for 3-4 minutes to restore crispiness. Sauce can be made ahead and stored in the fridge for up to 3 days.
