  • 1 cup panko breadcrumbs
  • ½ cup all-purpose flour
  • 2 large eggs, beaten
  • Olive oil spray
  • ½ cup mayonnaise
  • 3 tablespoons sriracha
  • 1 tablespoon honey
  • 1 teaspoon rice vinegar
  • ½ teaspoon garlic powder
  • Salt and pepper to taste
  • Optional: chopped green onions, fresh cilantro, lime wedges

Instructions

  1. Prep the shrimp by ensuring they are peeled, deveined, and completely dry. Set up three bowls: one with flour, one with beaten eggs, and one with panko breadcrumbs.
  2. Coat each shrimp by dipping first into the flour (shake off excess), then the eggs, and finally the panko breadcrumbs. Place coated shrimp on a baking sheet or plate without crowding.
  3. Preheat the air fryer to 400°F (200°C). Lightly spray the air fryer basket with olive oil spray.
  4. Arrange shrimp in a single layer in the air fryer basket. Lightly spray the tops of the shrimp with olive oil spray.
  5. Air fry for 4-5 minutes, flip the shrimp, then air fry for another 4-5 minutes until golden and crispy.
  6. While shrimp cooks, whisk together mayonnaise, sriracha, honey, rice vinegar, garlic powder, salt, and pepper to make the spicy mayo sauce. Adjust seasoning to taste.
  7. Once shrimp is done, toss gently with the spicy mayo until evenly coated.
  8. Serve immediately with optional chopped green onions, cilantro, and lime wedges.

Notes

Pat shrimp dry thoroughly before coating to ensure crispiness. Do not overcrowd the air fryer basket; cook in batches if necessary. Toss shrimp with sauce just before serving to keep coating crunchy. Reheat leftovers in the air fryer at 350°F for 3-4 minutes to restore crispiness. Sauce can be made ahead and stored in the fridge for up to 3 days.
