Description

  • 1 ½ cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ¾ cup granulated sugar (for batter)
  • 6 tablespoons unsalted butter, melted and cooled
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • ¼ cup granulated sugar (for coating)
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 2 tablespoons melted butter (for brushing)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners.
  2. If using regular apple juice, simmer 1 cup in a saucepan over medium-high heat until reduced to ½ cup thick syrup. Let cool completely.
  3. In a large mixing bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  4. In a separate bowl, whisk melted butter, sugar, egg, vanilla, and cooled reduced cider until combined.
  5. Pour wet ingredients into dry ingredients. Gently fold together until just combined; batter should be thick and slightly lumpy. Do not overmix.
  6. Divide batter evenly among muffin cups, filling about ¾ full.
  7. Bake for 18-20 minutes until tops are golden brown and a toothpick comes out clean.
  8. While muffins bake, mix coating sugar, cinnamon, and nutmeg in a small bowl.
  9. Remove muffins from oven and let sit in tin for 2 minutes. Transfer to a cooling rack.
  10. While still hot, brush tops lightly with melted butter and immediately roll in cinnamon sugar mixture.

Notes

Ensure apple cider is reduced to concentrate flavor. Do not overmix the batter to keep muffins tender. Coat muffins while they are still hot so the sugar adheres properly. Store in an airtight container at room temperature for up to 3 days.
