  • 1 ½ cups (190g) all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon kosher salt
  • 2 teaspoons pumpkin pie spice (or homemade mix: 1 tsp cinnamon, ½ tsp ginger, ¼ tsp nutmeg, ¼ tsp cloves)
  • 1 teaspoon vanilla extract
  • 1 ½ cups (250g) white chocolate chunks
  • Optional: ½ cup toasted pecans or walnuts

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper, leaving an overhang on the sides, and grease the parchment.
  2. Brown the butter: Melt butter in a medium saucepan over medium heat. Stir constantly until it turns deep golden amber with brown specks and smells nutty (5-7 minutes). Immediately remove from heat and pour into a heat-proof bowl. Let cool for 10-15 minutes until warm but not hot.
  3. Mix wet ingredients: In a large mixing bowl, whisk the cooled brown butter, brown sugar, and granulated sugar until smooth. Add eggs one at a time, whisking well after each addition. Stir in pumpkin puree and vanilla extract.
  4. Combine dry ingredients: In a separate bowl, whisk together flour, baking powder, baking soda, salt, and pumpkin pie spice.
  5. Make the batter: Add dry ingredients to the wet mixture. Fold gently with a spatula until no streaks of flour remain. Do not overmix.
  6. Fold in chocolate: Gently fold in white chocolate chunks (and nuts if using). Reserve a small handful of chocolate to sprinkle on top.
