  • 3/4 cup (150g) packed brown sugar
  • 1/4 cup (50g) granulated sugar
  • 1 large egg, room temperature
  • 2 teaspoons vanilla extract
  • 2 cups (250g) all-purpose flour, sifted
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups (270g) semi-sweet chocolate chips
  • Optional: 1/2 cup (45g) rolled oats

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, beat softened butter, brown sugar, and granulated sugar together until light and fluffy, about 3-4 minutes.
  3. Beat in the egg and vanilla extract until fully combined and glossy.
  4. In a separate bowl, whisk together flour, baking soda, salt, and oats if using.
  5. Gradually add dry ingredients to wet mixture, mixing on low speed or folding by hand until just combined.
  6. Fold in chocolate chips evenly, reserving some to press on top of dough balls if desired.
  7. Use a small cookie scoop or spoon to drop rounded tablespoons of dough about 2 inches apart on baking sheets. Press a few chocolate chips on top.
  8. Bake for 10-12 minutes until edges are set but centers look slightly underbaked.
  9. Let cookies cool on baking sheet for 5 minutes, then transfer to a cooling rack to cool completely.

Notes

Do not overbake to keep cookies soft; pull them out when centers are slightly underbaked. Use softened butter, not melted, to avoid flat cookies. Press chocolate chips on top for a bakery look. Store in airtight container with a slice of bread to maintain softness. Dough can be frozen and baked from frozen with extra 2-3 minutes baking time.
