Description
A fast, healthy, and kid-approved frozen snack made with Greek yogurt, fresh strawberries, granola, and honey. Perfect for busy weeknights and packed with protein and fiber.
Ingredients
- 2 cups Greek yogurt (full-fat or 2%)
- 1 cup sliced strawberries (about 150g)
- 1 cup granola (about 100g)
- 2 tablespoons honey
- 1 teaspoon vanilla extract
- 1 tablespoon chia seeds (optional)
Instructions
- In a medium bowl, combine 2 cups of Greek yogurt with 2 tablespoons of honey and 1 teaspoon of vanilla extract. Stir well until smooth and evenly mixed.
- Line a rimmed baking sheet with parchment paper.
- Pour the yogurt mixture onto the parchment-lined pan and spread evenly to about ½-inch thickness.
- Sprinkle the sliced strawberries evenly over the yogurt, then add the granola on top. If using, sprinkle chia seeds over the top.
- Freeze the baking sheet for at least 3 hours or until completely firm.
- Once frozen, lift the bark out using the parchment paper and cut into bars or squares.
- Store bars in an airtight container in the freezer. Let bars sit at room temperature for 2-3 minutes before eating.
Notes
Use full-fat Greek yogurt for creamier texture. Honey helps the bark freeze with a nice texture and balances tartness. Chia seeds help hold toppings together. Keep bark flat and even for easier cutting. Store in freezer until ready to eat. Let bars thaw 2-3 minutes before eating for best texture. Nut-free and vegan variations possible by swapping ingredients.
