Ingredients
- 1 pound flank steak or sirloin, thinly sliced
- 4 cups broccoli florets (about 300g)
- 1/3 cup low-sodium soy sauce (80ml)
- 2 tablespoons oyster sauce (30ml)
- 1 tablespoon brown sugar (12g)
- 4 cloves garlic, minced (about 1 tablespoon)
- 1 teaspoon freshly grated ginger (about 2g)
- 2 teaspoons cornstarch (6g)
- 2 tablespoons vegetable oil (30ml), divided
- 1/4 cup water or beef broth (60ml), divided
- 1 teaspoon sesame oil (5ml)
- 2 green onions, sliced thin (about 20g)
Instructions
- Thinly slice 1 pound of flank steak against the grain. Toss it in a bowl with 1 teaspoon cornstarch, 1 tablespoon soy sauce, and 1 teaspoon vegetable oil. Let it sit for at least 10 minutes to tenderize.
- In a separate bowl, whisk together 1/3 cup soy sauce, 2 tablespoons oyster sauce, 1 tablespoon brown sugar, 1 teaspoon cornstarch, and 1/4 cup water or beef broth. Set aside.
- Heat 1 tablespoon vegetable oil in a large skillet or wok over medium-high heat until shimmering. Add the beef in a single layer (cook in batches if needed) and cook undisturbed for about 2 minutes until browned on one side. Flip and cook for another 1-2 minutes until just cooked through. Remove beef and set aside.
- Add another tablespoon of oil to the skillet. Toss in 4 cups broccoli florets and stir-fry for 2 minutes. Pour in 1/4 cup water or beef broth, cover the pan, and let the broccoli steam for 2 more minutes until bright green and crisp-tender.
- Remove the lid, add minced garlic and grated ginger, and stir for 30 seconds until fragrant. Return the beef to the skillet. Pour the sauce over everything and toss to coat. Cook for another 1-2 minutes until the sauce thickens and everything is heated through.
- Turn off the heat and drizzle 1 teaspoon toasted sesame oil over the stir-fry. Toss in sliced green onions for freshness and color. Serve immediately over steamed rice or noodles.
