A light, refreshing, and visually stunning berry trifle that is perfect for summer cookouts. This make-ahead dessert features layers of vanilla sponge cake, fresh mixed berries, and a stabilized whipped cream cheese frosting.

- 1 pound (450g) strawberries, sliced
- 1 cup (150g) blueberries
- 1 cup (150g) raspberries
- 1 cup (150g) blackberries
- ½ cup (100g) granulated sugar
- 1 tablespoon lemon juice
- 1 teaspoon lemon zest
- 2 cups (480ml) heavy cream, cold
- ¼ cup (30g) confectioners’ sugar
- 2 teaspoons vanilla extract
- 4 oz (115g) cream cheese, softened
- 1 pound (450g) vanilla sponge cake, cut into cubes
- Extra whipped cream for garnish (optional)
- Edible flowers for garnish (optional)
Instructions
- Wash and hull strawberries, slicing them thinly. Toss all berries with granulated sugar, lemon juice, and lemon zest in a large bowl. Let sit for 15-20 minutes to release juices.
- Slice the vanilla sponge cake into ½-inch thick slices and cut into cubes or strips.
- In a large, chilled bowl, combine heavy cream, softened cream cheese, confectioners’ sugar, and vanilla extract. Beat on medium-high speed until stiff peaks form.
- Start assembling by placing a layer of cake cubes at the bottom of a large glass trifle bowl.
- Spoon a layer of the berry mixture (including juices) over the cake.
- Dollop generous mounds of whipped cream over the fruit and spread or leave rustic.
- Repeat layers (cake, berries, cream) 3-4 times, finishing with a final layer of cream.
- Garnish with whole berries, extra whipped cream, and lemon zest.
- Cover tightly and refrigerate for at least 2 hours, preferably overnight, before serving.
Notes
For best results, keep all ingredients cold, especially the cream and bowl. The trifle tastes better the next day as flavors meld. Do not freeze as the texture of the cream and berries will suffer. You can substitute gluten-free cake or dairy-free alternatives as needed.
