Boston Cream Poke Cake

  • Author: SALY
  • Total Time: 1 hour 10 minutes
  • Yield: 12 servings 1x

Description

A quick and easy homemade dessert that captures the classic Boston cream pie flavor with a moist cake soaked in vanilla pudding and topped with a luscious chocolate glaze.

Ingredients

Scale
  • 1 box yellow cake mix (about 15.25 oz / 432g)
  • 3 large eggs
  • 1 cup water (240ml)
  • 1/3 cup vegetable oil (80ml)
  • 1 package instant vanilla pudding mix (3.4 oz / 96g)
  • 2 cups milk (480ml), whole or 2%
  • 1 cup chocolate chips (170g), semi-sweet or bittersweet
  • 1/2 cup heavy cream (120ml)
  • 2 tablespoons butter (28g)

Instructions

  1. Preheat oven to 350°F (175°C). In a large bowl, combine yellow cake mix, eggs, water, and vegetable oil. Mix on medium speed for about 2 minutes until smooth.
  2. Pour batter evenly into a greased 9×13-inch baking pan.
  3. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean. Let cake cool for 10 minutes until warm but not hot.
  4. Using the end of a wooden spoon or skewer, poke holes all over the warm cake about every inch.
  5. Whisk together instant vanilla pudding mix and milk until thickened, about 2 minutes.
  6. Pour pudding evenly over the cake, filling the holes. Refrigerate for at least 1 hour to chill and set.
  7. In a small saucepan over low heat, combine chocolate chips, heavy cream, and butter. Stir constantly until melted and smooth. Remove from heat and let cool slightly.
  8. Pour chocolate glaze evenly over the chilled cake and spread gently with a spatula if needed.
  9. Let glaze set for about 10 minutes before slicing and serving.

Notes

[‘Don’t skip the poking step to allow pudding to soak in perfectly.’, ‘Use room temperature milk for pudding to thicken faster and more evenly.’, ‘Let cake cool slightly before poking to prevent pudding from sliding off.’, ‘Chill cake before glazing to prevent glaze from melting pudding.’, ‘Melt chocolate glaze on low heat to avoid burning or seizing.’, ‘Use a sharp knife dipped in hot water for clean slices, wiping between cuts.’, ‘For smoother glaze, stir in a teaspoon of light corn syrup while melting chocolate.’]
