Ingredients
- 2 pounds Russet potatoes (about 900g)
- 6 tablespoons unsalted butter (85g)
- ½ cup whole milk (120ml), warmed
- Salt, to taste
- Freshly ground black pepper, to taste
- Optional: 2 tablespoons fresh chives or parsley, chopped
Instructions
- Peel the potatoes and cut into roughly 1.5-inch chunks. Place in a large pot and cover with cold water. Add about 1 tablespoon salt to the water.
- Bring to a boil, then reduce to a simmer and cook until potatoes are fork-tender, about 15-20 minutes. Do not overcook.
- While potatoes cook, melt butter in a small saucepan over medium heat. Stir constantly until butter foams and turns golden brown with a nutty aroma. Remove from heat and pour into a bowl.
- In the same saucepan, gently warm the milk until just warm to the touch.
- Drain potatoes well and return to the hot pot off the heat. Mash with a potato masher until mostly smooth but still a little textured.
- Pour browned butter over mashed potatoes, then slowly add warm milk while stirring. Mix until desired texture is reached.
- Season with salt and pepper to taste. Adjust consistency by adding more warm milk if too thick or mashing more if too loose.
- Transfer to a serving bowl and garnish with fresh chives or parsley if desired. Serve immediately while warm.
Notes
Use medium-low heat and stir constantly when browning butter to avoid burning. Warm the milk before adding to keep potatoes creamy. Avoid over-mashing to prevent gluey texture. You can make brown butter ahead and reheat gently. Store leftovers in an airtight container in the fridge up to 4 days; reheat gently with milk to restore creaminess. Freezing is not recommended due to texture changes.
