Description

A quick and easy weeknight meal featuring crispy-roasted sweet potatoes stuffed with a creamy, spicy buffalo chicken mixture, topped with melted cheddar cheese.


Ingredients

  • 4 medium sweet potatoes (68 oz each)
  • 2 cups shredded rotisserie chicken
  • 1/2 cup buffalo sauce (Frank’s RedHot recommended)
  • 1/4 cup full-fat mayonnaise
  • 1/4 cup blue cheese dressing
  • 1 cup shredded sharp cheddar cheese, divided
  • 34 green onions, sliced
  • Olive oil spray or brush
  • Salt and black pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Scrub sweet potatoes clean and dry thoroughly. Poke each potato 8-10 times with a fork to let steam escape.
  3. Brush potatoes lightly with olive oil and sprinkle with salt.
  4. Place potatoes directly on the middle rack or on a baking sheet. Roast for 35-45 minutes until soft when squeezed gently.
  5. While potatoes roast, shred chicken and toss in a bowl with buffalo sauce, mayonnaise, blue cheese dressing, half of the cheddar cheese, salt, and pepper.
  6. Remove potatoes from oven and let cool for 2 minutes. Slice open lengthwise, leaving a border, and fluff the inside flesh with a fork.
  7. Spoon the buffalo chicken mixture generously into each potato.
  8. Top with remaining cheddar cheese.
  9. Broil for 2-3 minutes until cheese is melted and bubbly, watching closely to prevent burning.
  10. Garnish with sliced green onions and serve immediately with celery sticks.

Notes

Do not wrap sweet potatoes in foil as this steams them and makes the skin soggy. Bake them bare for crispy skin. If the filling is too runny, reduce the amount of buffalo sauce. For leftovers, store in an airtight container in the fridge for up to 3 days and reheat in the oven at 350°F.
