- 1 pound sirloin or ribeye steak, cut into 1-inch cubes
- 3 tablespoons unsalted butter
- 4 cloves garlic, minced (about 1 tablespoon)
- 1 tablespoon olive oil
- 1 teaspoon salt, or to taste
- Freshly ground black pepper, to taste
- 2 tablespoons fresh parsley, chopped (optional)
- 1/4 teaspoon red pepper flakes (optional)
Instructions
- Cut steak into 1-inch cubes and pat dry with paper towels. Season generously with salt and black pepper. Set aside.
- Heat cast iron skillet over medium-high heat. Add olive oil and heat until shimmering.
- Add steak cubes in a single layer without overcrowding. Cook undisturbed for 2-3 minutes, then flip and brown the other side. Remove steak bites to a plate once browned but not fully cooked.
- Reduce heat to medium. Add butter to skillet. Once melted, add minced garlic and red pepper flakes. Stir constantly for about 1 minute until fragrant but not browned.
- Return steak bites to skillet and toss in garlic butter. Cook for another 2-3 minutes until steak reaches desired doneness (medium-rare to medium). Toss frequently.
- Turn off heat. Sprinkle chopped fresh parsley over steak bites, toss gently, and serve immediately.
Notes
Pat steak dry before cooking to ensure a good sear. Do not overcrowd the pan; cook in batches if needed. Use room temperature steak for even cooking. Add garlic after searing to avoid burning. Let steak rest briefly off heat before serving. For reheating, warm gently in a skillet with a splash of water or broth to keep moist.
