Description
A stress-free, make-ahead holiday breakfast casserole that combines a fluffy blintz batter with a rich, creamy cottage cheese filling, topped with a bright berry compote. It serves a crowd with minimal effort and zero rolling required.
Ingredients
- 4 large eggs, room temperature
- 1 ½ cups whole milk
- 1 cup all-purpose flour
- 3 tablespoons sugar
- 4 tablespoons melted unsalted butter
- 1 teaspoon vanilla extract
- ½ teaspoon salt
- 16 oz cottage cheese
- 8 oz full-fat cream cheese, softened
- 1 large egg yolk
- 2 tablespoons sugar
- 1 teaspoon vanilla extract
- 2 cups mixed berries (fresh or frozen)
- ¼ cup sugar
- 1 tablespoon lemon juice
- 2 tablespoons water
- 1 teaspoon cornstarch mixed with 1 teaspoon water (optional)
Instructions
- Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish with butter and dust with flour.
- In a large bowl, whisk together eggs, milk, melted butter, vanilla, sugar, and salt. Add flour and whisk until smooth. Pour batter into the prepared baking dish.
- In a medium bowl, beat cream cheese, sugar, egg yolk, and vanilla until smooth. Blend cottage cheese until smooth, then mix it into the cream cheese mixture until combined and spreadable.
- Spread the cheese filling evenly over the batter in the baking dish.
- Bake for 35-40 minutes until edges are golden brown and the center is set.
- While baking, combine berries, sugar, lemon juice, and water in a small saucepan over medium heat. Simmer for 5 minutes, add cornstarch slurry if using, and simmer 2 more minutes until thickened.
- Let casserole cool for 5-10 minutes before slicing. Serve warm with berry compote drizzled on top.
Notes
Blend the cottage cheese until completely smooth to avoid lumps. Ensure cream cheese and eggs are at room temperature for a smoother batter. The casserole may puff up and settle slightly while cooling, which is normal. Do not overbake to keep it creamy. Can be assembled the night before and refrigerated; add 5-10 minutes to baking time if baking from cold.
