Instructions
- Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a large mixing bowl, combine softened butter, brown sugar, and white sugar. Mix with a fork or wooden spoon until smooth and well-blended.
- Stir in the egg and vanilla extract until just combined.
- Add the flour and salt to the wet mixture. Stir gently until no streaks of flour remain; do not overmix.
- Fold in the rolled oats and toffee bits until evenly distributed.
- Scoop dough onto prepared baking sheets, leaving 2 inches between each cookie.
- Bake for 12-14 minutes until edges are golden brown but centers still look slightly soft.
- Let cookies sit on the hot baking sheet for 5 minutes to set, then transfer to a cooling rack.
Notes
