These chewy coconut macaroons feature a tender, moist coconut center dipped in a crisp dark chocolate shell. Naturally gluten-free and simple to make, they are an elegant yet foolproof dessert.

- 14 ounces (400g) shredded sweetened coconut
- 3 large egg whites (room temperature)
- ½ cup (100g) granulated sugar
- 1 teaspoon vanilla extract
- ¼ teaspoon salt
- 1 tablespoon cornstarch
- 8 ounces (225g) dark chocolate chips (semi-sweet)
- 1 tablespoon coconut oil
- Flaky sea salt (optional, for topping)
Instructions
- Preheat oven to 325°F (165°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk egg whites until soft peaks form.
- Slowly add granulated sugar while whisking until dissolved and mixture is glossy. Add vanilla extract and salt; whisk to combine.
- Sprinkle cornstarch over the mixture, then add shredded coconut. Gently fold with a spatula until coconut is coated and mixture is uniform.
- Drop mounds of mixture (1.5-2 tablespoons each) onto the prepared baking sheet. Press tops down slightly with the back of a spoon. Space 2 inches apart.
- Bake for 18-20 minutes until edges are golden brown and centers are set but slightly soft.
- Cool macaroons completely on the baking sheet (about 30 minutes).
- Melt dark chocolate chips and coconut oil together (microwave in 30-second intervals or double boiler) until smooth.
- Dip half of each cooled macaroon into the chocolate, let excess drip off, and place on a wire rack.
- Sprinkle with flaky sea salt if desired. Let chocolate set at room temperature or in the fridge for 15 minutes.
Notes
Use sweetened coconut for best texture. Ensure egg whites are room temperature for better whipping. Do not overmix when folding in coconut to maintain airiness. Cool macaroons completely before dipping to prevent melting the chocolate.
