Ingredients
- 1 cup (227g) unsalted butter, softened
- 1 ½ cups (300g) granulated sugar, divided
- ½ cup (100g) packed brown sugar
- 2 large eggs, room temperature

- 2 ¾ cups (350g) all-purpose flour, sifted
- 2 teaspoons cream of tartar
- 1 teaspoon baking soda
- ½ teaspoon salt
- 3 tablespoons (24g) cinnamon
Instructions
- Preheat oven to 350°F (175°C).
- Cream the softened butter, ¾ cup granulated sugar, and brown sugar together until light and fluffy, about 3-4 minutes with an electric mixer on medium speed.
- Beat in the eggs one at a time, fully incorporating each before adding the next, then add vanilla extract and mix until smooth.
- In a separate bowl, whisk together the sifted all-purpose flour, cream of tartar, baking soda, and salt.
- Slowly add the dry ingredients to the wet mixture in batches, mixing on low speed just until combined. Avoid overmixing.
- In a small bowl, combine the remaining ¾ cup granulated sugar with the cinnamon to make the cinnamon sugar coating.
- Using a 2-tablespoon cookie scoop or spoon, scoop dough and roll into balls. Roll each ball generously in the cinnamon sugar mixture to coat completely.
- Place coated dough balls about 2 inches apart on parchment-lined baking sheets.
