  • Author: SALY
  • Total Time: 1 hour 15 minutes to 1 hour 25 minutes (plus chilling time)
  • Yield: 8 servings 1x

Description

A delicious fusion of cinnamon rolls and classic apple pie with a flaky, buttery crust and warm cinnamon-spiced apple filling. Perfect for cozy fall evenings and family gatherings.

Ingredients

Scale
  • 2 ½ cups (315g) all-purpose flour (unbleached preferred)
  • 1 cup (225g) unsalted butter, cold and cubed
  • ¼ cup (50g) granulated sugar
  • 1 teaspoon salt
  • 68 tablespoons (90-120ml) ice water
  • 56 medium apples (about 2 pounds / 900g), a mix of Granny Smith and Honeycrisp, peeled, cored, and thinly sliced
  • ½ cup (100g) brown sugar
  • 2 teaspoons ground cinnamon
  • ½ teaspoon ground nutmeg
  • 2 tablespoons (30ml) lemon juice
  • 1 teaspoon vanilla extract
  • 2 tablespoons (15g) all-purpose flour or cornstarch
  • Cinnamon sugar topping: ¼ cup sugar mixed with 1 teaspoon cinnamon

Instructions

  1. Step 1: Make the Flaky Pie Crust (15 minutes + chilling)
  2. 1. Mix the flour, sugar, and salt in a large bowl.
  3. 2. Cut the cold, cubed butter into the flour using a pastry cutter or fingers until mixture resembles coarse crumbs with pea-sized pieces.
  4. 3. Slowly add ice water, one tablespoon at a time, mixing gently until dough just comes together. Do not overwork.
  5. 4. Divide dough in half, shape each into a flat disk, wrap in plastic, and chill in fridge for at least 1 hour (up to 2 days).
  6. Step 2: Prepare the Apple Filling (10 minutes)
  7. 1. Toss thinly sliced apples with lemon juice immediately to prevent browning.
  8. 2. Add brown sugar, cinnamon, nutmeg, vanilla, and flour or cornstarch. Toss to coat evenly.
  9. 3. Set aside while rolling out dough.
  10. Step 3: Roll Out the Dough & Assemble (15 minutes)
  11. 1. Remove one dough disk from fridge and roll out on floured surface into a 12-inch circle. Transfer to pie dish, pressing gently.
  12. 2. Pour apple filling into crust, spreading evenly.
  13. 3. Roll out second dough disk into 12-inch circle. Cover pie completely or cut strips for lattice top.
  14. 4. Trim excess dough and pinch edges to seal.
  15. 5. Brush top crust with milk or beaten egg (optional) and sprinkle generously with cinnamon sugar mixture.
  16. Step 4: Bake the Pie (50-60 minutes)
  17. 1. Preheat oven to 375°F (190°C).
  18. 2. Place pie on baking sheet to catch drips and bake for 50-60 minutes until crust is golden and filling bubbles.
  19. 3. Cover edges with foil halfway through baking if they brown too quickly.
  20. 4. Let pie cool at least 2 hours before slicing to allow filling to set.

Notes

Chilling the dough for at least 1 hour is essential for a flaky crust. Use a mix of tart Granny Smith and sweet Honeycrisp apples for balanced flavor. Cover pie edges with foil halfway through baking to prevent burning. Let pie cool for at least 2 hours before slicing to avoid runny filling. Optional: brush melted butter over crust after baking for a glossy finish.
