Ingredients
- 2 ½ cups (315g) all-purpose flour (unbleached preferred)
- 1 cup (225g) unsalted butter, cold and cubed
- ¼ cup (50g) granulated sugar
- 1 teaspoon salt
- 6–8 tablespoons (90-120ml) ice water
- 5–6 medium apples (about 2 pounds / 900g), a mix of Granny Smith and Honeycrisp, peeled, cored, and thinly sliced
- ½ cup (100g) brown sugar
- 2 teaspoons ground cinnamon
- ½ teaspoon ground nutmeg
- 2 tablespoons (30ml) lemon juice
- 1 teaspoon vanilla extract
- 2 tablespoons (15g) all-purpose flour or cornstarch
- Cinnamon sugar topping: ¼ cup sugar mixed with 1 teaspoon cinnamon
Instructions
- Step 1: Make the Flaky Pie Crust (15 minutes + chilling)
- 1. Mix the flour, sugar, and salt in a large bowl.
- 2. Cut the cold, cubed butter into the flour using a pastry cutter or fingers until mixture resembles coarse crumbs with pea-sized pieces.
- 3. Slowly add ice water, one tablespoon at a time, mixing gently until dough just comes together. Do not overwork.
- 4. Divide dough in half, shape each into a flat disk, wrap in plastic, and chill in fridge for at least 1 hour (up to 2 days).
- Step 2: Prepare the Apple Filling (10 minutes)
- 1. Toss thinly sliced apples with lemon juice immediately to prevent browning.
- 2. Add brown sugar, cinnamon, nutmeg, vanilla, and flour or cornstarch. Toss to coat evenly.
- 3. Set aside while rolling out dough.
- Step 3: Roll Out the Dough & Assemble (15 minutes)
- 1. Remove one dough disk from fridge and roll out on floured surface into a 12-inch circle. Transfer to pie dish, pressing gently.
- 2. Pour apple filling into crust, spreading evenly.
- 3. Roll out second dough disk into 12-inch circle. Cover pie completely or cut strips for lattice top.
- 4. Trim excess dough and pinch edges to seal.
- 5. Brush top crust with milk or beaten egg (optional) and sprinkle generously with cinnamon sugar mixture.
- Step 4: Bake the Pie (50-60 minutes)
- 1. Preheat oven to 375°F (190°C).
- 2. Place pie on baking sheet to catch drips and bake for 50-60 minutes until crust is golden and filling bubbles.
- 3. Cover edges with foil halfway through baking if they brown too quickly.
- 4. Let pie cool at least 2 hours before slicing to allow filling to set.
