  • 1 small red onion, finely diced
  • 1 cup cherry tomatoes, halved
  • 1 medium English cucumber, diced
  • 1/2 cup fresh cilantro, chopped
  • 1 large ripe avocado (for dressing)
  • 34 tablespoons fresh lime juice
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons Greek yogurt
  • 1 clove garlic, minced
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • Black pepper to taste
  • Lime zest (optional, for garnish/dressing)

Instructions

  1. Dice the red onion, cucumber, and tomatoes. Finely chop the cilantro and mince the garlic. Set aside.
  2. In a blender, combine the ripe avocado, lime juice, lime zest, olive oil, Greek yogurt, minced garlic, cumin, salt, and pepper. Blend until smooth. Adjust seasoning if needed.
  3. Heat a large skillet over medium-high heat with a drizzle of olive oil. Pat shrimp dry and season with salt and pepper.
  4. Cook shrimp in the skillet for 1-2 minutes per side until pink and opaque. Remove from heat and let cool slightly.
  5. In a large mixing bowl, combine the diced vegetables, cilantro, and cooked shrimp.
  6. Pour the avocado dressing over the salad and gently toss to coat evenly.
  7. Serve immediately on a platter or in bowls, garnished with sliced avocado, extra cilantro, and red pepper flakes if desired.

Notes

Do not overcook the shrimp or they will become rubbery. Use very ripe avocados for the dressing to ensure a smooth texture. To prevent browning, store the dressing in an airtight container with plastic wrap pressed directly onto the surface. This salad is best served cold or at room temperature; do not reheat.
