A fresh, crunchy, and creamy salad featuring cucumbers, cherry tomatoes, and crumbled feta cheese tossed in a tangy Greek yogurt dressing. Perfect as a light side dish or a refreshing lunch option.
Ingredients
- 2 medium English cucumbers (about 14 oz / 400g), sliced into thin half-moons
- 1.5 cups cherry or grape tomatoes (about 8 oz / 225g), halved
- 1 cup crumbled feta cheese (about 5 oz / 150g)
- ½ cup full-fat Greek yogurt (4 fl oz / 120ml)
- 3 tablespoons extra virgin olive oil (1.5 fl oz / 45ml), plus extra for drizzling
- 2 tablespoons fresh lemon juice (1 fl oz / 30ml)
- 1 clove garlic, minced
- 2 tablespoons fresh dill, chopped (or 1 teaspoon dried dill)
- ¼ small red onion, thinly sliced (optional)
- Salt and pepper to taste
Instructions
- Wash cucumbers and tomatoes. Slice cucumbers into thin half-moons about ¼ inch thick. Halve cherry tomatoes. If using red onion, slice thin and soak in cold water for 5 minutes to mellow sharpness, then drain.
- Chop fresh dill finely.
- In a small bowl or jar, whisk together Greek yogurt, olive oil, fresh lemon juice, minced garlic, salt, and pepper. Adjust seasoning to balance tangy and creamy flavors. Add water teaspoon by teaspoon if dressing is too thick.
- In a large mixing bowl, combine cucumbers, tomatoes, red onion (if using), and dill. Pour dressing over and gently toss to coat evenly.
- Crumble feta cheese over the salad and gently mix once more, keeping feta chunky.
- Optional: Chill salad in the refrigerator for 30 minutes to let flavors meld. Stir before serving and drizzle extra olive oil and cracked black pepper on top if desired.
Notes
Use English cucumbers for less bitterness and fewer seeds. Soak red onion slices in cold water to mellow sharpness. Crumble feta yourself for better texture. Dressing can be made ahead and stored up to 3 days in the fridge. Avoid freezing the salad. To prevent watery salad, drain diced tomatoes and consider salting cucumbers and letting them sit before mixing.
