Description

A thick, creamy, and delicious frozen piña colada made with just three main ingredients. This recipe replicates the taste of a tiki bar drink at home without needing a fancy machine.

  • 1 can (13.5 oz / 380ml) full-fat coconut milk, shaken well
  • 1 cup (240ml) 100% pineapple juice
  • 1 cup (150g) frozen pineapple chunks
  • 23 tablespoons white rum (optional, for adult version)
  • 1/2 teaspoon vanilla extract (optional)
  • Ice cubes (optional, if blender is weak)

Instructions

  1. Prep the fruit: If using fresh pineapple, chop into chunks and freeze for at least 4 hours. Ensure coconut milk is chilled.
  2. Add ingredients to blender: Combine coconut milk, pineapple juice, frozen pineapple chunks, and rum (if using). Start with less rum and adjust to taste.
  3. Blend until smooth: Blend on high speed for 30 seconds to 1 minute. Stop to scrape down sides if needed. The mixture should be thick and creamy like soft-serve ice cream. Add splash of juice if too thick, or more frozen fruit if too thin.
  4. Taste and adjust: Taste the mixture. Add lime juice if too sweet, or sugar/honey if too tart.
  5. Serve: Pour into chilled glasses. Garnish with pineapple wedge, shredded coconut, and a cherry. Serve immediately.

Notes

Use full-fat coconut milk for creaminess; do not use light coconut milk or coconut water. For best texture, use frozen pineapple chunks instead of ice. Chill glasses in the freezer for 10 minutes before serving. Store leftovers in an airtight container in the fridge for up to 2 days, shaking or blending again before serving. Do not freeze the finished drink as it will become icy.
