  • 1 tablespoon baking powder (12g)
  • 1 teaspoon salt (5g)
  • ½ teaspoon freshly ground black pepper (1g)
  • 1 teaspoon garlic powder (3g)
  • 4 tablespoons unsalted butter (60g), melted
  • ½ cup hot sauce (120ml), such as Frank’s RedHot
  • 1 tablespoon honey (20g), optional
  • Optional garnish: chopped fresh parsley or celery sticks

Instructions

  1. Pat wings dry with paper towels to remove moisture.
  2. In a large mixing bowl, toss wings with baking powder, salt, black pepper, and garlic powder until evenly coated.
  3. Preheat air fryer to 380°F (193°C) for 3 minutes.
  4. Place wings in a single layer in the air fryer basket without overcrowding.
  5. Cook wings for 12 minutes, then flip using tongs and cook for an additional 13 minutes until skin is golden brown, crispy, and internal temperature reaches 165°F (74°C).
  6. While wings cook, melt butter in a small saucepan or microwave-safe bowl.
  7. Stir in hot sauce and honey until smooth and combined; adjust to taste.
  8. Transfer cooked wings to a large bowl, pour buffalo sauce over them, and toss with tongs until evenly coated.
  9. Serve immediately with optional parsley or celery sticks.

Notes

Do not substitute baking powder with baking soda; baking powder is key for crispy skin. Pat wings dry thoroughly before cooking. Cook wings in batches if your air fryer basket is small to avoid steaming. Toss wings in sauce only after cooking to maintain crispiness. Leftover wings can be reheated in the air fryer at 350°F for 4-5 minutes to restore crispiness.
