This crispy smashed potatoes recipe with garlic herb butter delivers golden, crunchy edges and fluffy insides. It’s an easy, family-friendly side dish perfect for any meal.
Ingredients
- 2 pounds (900g) baby potatoes (Yukon Gold or red)
- 3 tablespoons (45ml) extra virgin olive oil
- 4 tablespoons (60g) unsalted butter
- 4 cloves garlic, minced (about 1 tablespoon)
- 2 tablespoons fresh herbs, chopped (parsley and thyme, or rosemary)
- Salt and pepper to taste
- ¼ cup (25g) grated Parmesan cheese (optional)
Instructions
- Wash baby potatoes and place in a large pot. Cover with cold water by about an inch and add a generous pinch of salt.
- Bring to a boil and cook until fork-tender but not falling apart, about 15-20 minutes depending on size.
- Drain potatoes in a colander and let cool for about 5 minutes to dry the skins slightly.
- Preheat oven to 450°F (230°C). Place potatoes spaced out on a rimmed baking sheet lined with parchment paper.
- Using a potato masher or bottom of a glass, gently press each potato until about ½ inch thick, allowing cracks to form for crispiness.
- In a small saucepan over low heat, melt butter. Add minced garlic and stir for 1-2 minutes until fragrant but not brown.
- Stir in chopped fresh herbs, salt, and pepper. Remove from heat.
- Brush smashed potatoes generously with garlic herb butter on all sides. Sprinkle Parmesan cheese on top if using.
- Roast potatoes in the oven for 25-30 minutes, flipping halfway through with tongs or a spatula, until golden brown and crispy.
- Serve immediately with any leftover garlic herb butter drizzled on top and a sprinkle of flaky sea salt if desired.

Boil potatoes first to ensure soft insides. Dry potatoes well before roasting for maximum crispiness. Roast at high heat (450°F) and flip halfway through. Fresh garlic and herbs make a big flavor difference. Reheat leftovers in oven at 375°F for 10-15 minutes to restore crispiness. Avoid microwaving to keep texture. For a vegan version, substitute butter with olive oil and add nutritional yeast.
