  • 3 tablespoons (45ml) extra virgin olive oil
  • 4 tablespoons (60g) unsalted butter
  • 4 cloves garlic, minced (about 1 tablespoon)
  • 2 tablespoons fresh herbs, chopped (parsley and thyme, or rosemary)
  • Salt and pepper to taste
  • ¼ cup (25g) grated Parmesan cheese (optional)

Instructions

  1. Wash baby potatoes and place in a large pot. Cover with cold water by about an inch and add a generous pinch of salt.
  2. Bring to a boil and cook until fork-tender but not falling apart, about 15-20 minutes depending on size.
  3. Drain potatoes in a colander and let cool for about 5 minutes to dry the skins slightly.
  4. Preheat oven to 450°F (230°C). Place potatoes spaced out on a rimmed baking sheet lined with parchment paper.
  5. Using a potato masher or bottom of a glass, gently press each potato until about ½ inch thick, allowing cracks to form for crispiness.
  6. In a small saucepan over low heat, melt butter. Add minced garlic and stir for 1-2 minutes until fragrant but not brown.
  7. Stir in chopped fresh herbs, salt, and pepper. Remove from heat.
  8. Brush smashed potatoes generously with garlic herb butter on all sides. Sprinkle Parmesan cheese on top if using.
  9. Roast potatoes in the oven for 25-30 minutes, flipping halfway through with tongs or a spatula, until golden brown and crispy.
  10. Serve immediately with any leftover garlic herb butter drizzled on top and a sprinkle of flaky sea salt if desired.

Boil potatoes first to ensure soft insides. Dry potatoes well before roasting for maximum crispiness. Roast at high heat (450°F) and flip halfway through.
