  • 4 cloves garlic, minced
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1/2 cup heavy cream or milk
  • 2 teaspoons fresh thyme, chopped
  • 1/2 teaspoon black pepper
  • 1 cup frozen peas (optional)

Instructions

  1. Heat butter in a large skillet over medium heat. Add onion, carrots, and celery; cook for 5-6 minutes until softened. Add garlic and thyme in the last minute until fragrant.
  2. Transfer sautéed vegetables to a 6-quart slow cooker. Add chicken thighs, chicken broth, and heavy cream. Season with salt and pepper. Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours until chicken is tender.
  3. Shred the chicken directly in the pot using two forks, discarding any skin or cartilage.
  4. In a mixing bowl, whisk together flour, baking powder, and salt. Make a well and pour in 1/2 cup heavy cream or milk. Stir with a fork until a shaggy, sticky dough forms. Do not overmix.
  5. Drop spoonfuls of dumpling dough onto the surface of the hot stew. Cover and cook on HIGH for 30 minutes without lifting the lid.
  6. Check dumplings by cutting one in half to ensure no raw dough remains. If using peas, stir them in during the last 5 minutes. Adjust seasoning and serve immediately.

Notes

Sautéing the vegetables first adds significant flavor depth. Do not overmix the dumpling dough to ensure they remain fluffy. Keep the lid closed during the dumpling cooking phase to allow steam to rise. This recipe does not freeze well due to the cream sauce and dumplings.
