Description

Ingredients

  • 2 to 2.5 pounds chuck roast
  • 4 tablespoons unsalted butter
  • 1 packet (1 ounce) dry ranch dressing mix
  • 1 packet (1 ounce) dry au jus gravy mix
  • 8 to 10 pepperoncini peppers, halved
  • 2 tablespoons pepperoncini juice
  • 1/2 cup beef broth (low-sodium)
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon red pepper flakes (optional)

Instructions

  1. Trim large chunks of hard fat from the chuck roast, leaving some marbling. Pat dry and place in a small (3.5-quart) slow cooker insert.
  2. Whisk together the dry ranch dressing mix and dry au jus gravy mix. Sprinkle evenly over the top of the roast.
  3. Dot the roast with cubed butter. Scatter the halved pepperoncini peppers over the top and pour the pepperoncini juice over everything.
  4. Pour in the beef broth. Scatter minced garlic, dried thyme, and red pepper flakes (if using) over the top.
  5. Cover and cook on LOW for 6 to 8 hours, until the meat is fork-tender and shreds easily.
  6. Remove the meat to a cutting board and shred into bite-sized pieces using two forks.
  7. Discard large pieces of fat. Pour the cooking juices and peppers over the shredded meat. Taste and adjust seasoning if needed. Serve immediately.

Notes

Do not cook on HIGH as the meat will be tough. Ensure you use a small slow cooker for even cooking; if using a 6-quart pot, add vegetables to fill space and potentially increase cooking time slightly. Save leftover juice for later use over mashed potatoes or rice. For a spicy version, add red pepper flakes or use spicy pepperoncini.
