A rich and indulgent tart combining deep dark chocolate and aromatic espresso, topped with a silky smooth ganache and a buttery, crunchy crust. Perfect for special occasions or a comforting treat.
Ingredients
- 8 oz (225g) dark chocolate (70% cocoa or higher)
- 1 tablespoon (7g) espresso powder
- 1 cup (240ml) heavy cream
- 4 tablespoons (55g) unsalted butter, room temperature
- 1 ½ cups (190g) all-purpose flour
- ⅓ cup (40g) powdered sugar
- ¼ teaspoon (1.5g) salt
- 1 large egg yolk
- 1 teaspoon (5ml) vanilla extract
Instructions
- Make the Crust: In a large bowl, whisk together flour, powdered sugar, and salt.
- Add cold butter cubes and rub into flour until mixture resembles coarse crumbs.
- Whisk egg yolk and vanilla extract together, then add to flour mixture.
- Mix gently until dough just comes together; form into a disk, wrap in plastic, and chill for at least 30 minutes.
- Blind Bake the Crust: Preheat oven to 350°F (175°C).
- Roll out chilled dough to fit a 9-inch tart pan. Press into pan, trim edges, and prick bottom with fork.
- Line crust with parchment paper and fill with pie weights or dried beans.
- Bake for 15 minutes, remove weights and parchment, then bake another 5 minutes until golden.
- Cool crust completely before adding ganache.
- Prepare Ganache: Finely chop dark chocolate and place in heatproof bowl.
- Heat heavy cream and espresso powder in saucepan over medium heat until just simmering (do not boil).
- Pour hot cream mixture over chopped chocolate; let sit for 2 minutes.
- Add softened butter and stir gently until smooth and glossy. If needed, warm over double boiler briefly while stirring.
- Pour ganache into cooled crust and smooth top with spatula.
- Chill tart in refrigerator for at least 2 hours until ganache sets.
- Serve: Remove tart from pan, slice with a sharp knife warmed under hot water for clean cuts.
- Optional: Dust with cocoa powder or garnish with espresso beans or chocolate shavings.
