Description
A quick and forgiving banana bread recipe made in one bowl, featuring moist texture and melty chocolate chips—perfect for busy weeknights.
Ingredients
- 3 medium ripe bananas (about 1 ½ cups mashed)
- 1 ¾ cups (220g) all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- ½ cup (100g) granulated sugar
- ¼ cup packed (50g) brown sugar
- ½ cup (115g) unsalted butter, melted and slightly cooled
- 2 large eggs
- 1 teaspoon vanilla extract
- ½ cup (120ml) sour cream
- 1 cup (170g) chocolate chips (semi-sweet or milk chocolate)
Instructions
- Peel and mash the ripe bananas in a large mixing bowl using a fork or potato masher until mostly smooth with a few small lumps.
- Add melted butter, granulated sugar, brown sugar, eggs, vanilla extract, and sour cream to the mashed bananas. Stir until smooth and well combined.
- Sprinkle flour, baking soda, and salt over the wet mixture. Fold gently until just combined; small streaks of flour are okay. Avoid overmixing.
- Fold in chocolate chips evenly, reserving a few to sprinkle on top.
- Pour batter into a greased 9×5-inch loaf pan and smooth the top. Scatter reserved chocolate chips over the surface.
- Bake in a preheated oven at 350°F (175°C) for 60 to 70 minutes. Check doneness at 60 minutes with a toothpick; it should come out clean or with a few moist crumbs.
- Let the bread cool in the pan for about 15 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
Use ripe bananas with brown spots for natural sweetness and moisture. Do not overmix the batter to avoid dense bread. Start checking for doneness at 60 minutes and tent with foil if the top browns too quickly. Let bread cool completely before slicing for clean cuts. Optional: add ½ cup chopped walnuts or pecans for crunch. For vegan version, substitute eggs with flax eggs, sour cream with dairy-free yogurt, and butter with coconut oil.
