Description

A refreshing, no-cook side dish featuring paper-thin English cucumbers marinated in a sharp, sweet, and spicy apple cider vinegar dressing with fresh dill and mint.


Ingredients

  • 3 large English (Hothouse) cucumbers (about 2 pounds / 900g)
  • 1 medium red onion (thinly sliced, about 100g)
  • ½ cup fresh dill (chopped, about 15g)
  • ¼ cup fresh mint (chopped, about 5g)
  • ½ teaspoon red pepper flakes
  • 3 tablespoons apple cider vinegar
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon Dijon mustard
  • Kosher salt and black pepper (to taste)

Instructions

  1. Wash cucumbers. If using English cucumbers, leave skin on; if using regular cucumbers, peel in stripes. Slice cucumbers lengthwise into thin planks (about 1/8 inch thick).
  2. Place sliced cucumbers in a large bowl, sprinkle with 1 teaspoon salt, toss to coat, and let sit for 15 minutes to draw out excess water.
  3. In a small jar or bowl, whisk together apple cider vinegar, olive oil, honey, Dijon mustard, red pepper flakes, and black pepper until emulsified.
  4. Drain the liquid from the cucumbers. Pat them dry with a clean kitchen towel or paper towels until damp but not dripping.
  5. Return drained cucumbers to the large bowl. Add sliced red onion, chopped dill, and chopped mint.
  6. Pour the dressing over the vegetables and toss gently but thoroughly to coat everything evenly.
  7. Cover the bowl and refrigerate for at least 30 minutes, ideally 1-2 hours, to allow flavors to meld.
  8. Give the salad a final toss before serving chilled.

Notes

English cucumbers are preferred for their thin, seedless skins. If using regular cucumbers, peel them and scoop out seeds to prevent a watery salad. Salting and draining the cucumbers is crucial to remove excess water. The salad improves with time, so make it ahead if possible. Do not freeze this salad as cucumbers will turn to mush.
