Ingredients

  • 1/4 cup fresh lemon juice
  • 1 tablespoon smoked paprika
  • 4 cloves garlic, minced
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey
  • 1/2 cup fresh herbs, chopped (1/4 cup parsley, 1/4 cup dill, 2 tablespoons thyme)
  • 1 teaspoon kosher salt
  • 1/2 teaspoon coarse black pepper
  • 4 salmon fillets (6oz each, skin-on recommended)
  • Vegetable oil (for grates)
  • Lemon wedges (for serving)
  • Fresh herb sprigs (for garnish)

Instructions

  1. In a medium bowl, whisk together olive oil, lemon juice, smoked paprika, minced garlic, Dijon mustard, honey, salt, and pepper. Stir in the chopped fresh herbs.
  2. Rinse salmon fillets and pat dry. Place in a resealable bag or glass dish.
  3. Pour half of the marinade over the salmon, massaging it in. Reserve the rest for basting. Refrigerate for 30 minutes (do not exceed 1 hour).
  4. Preheat grill to medium-high heat (approx. 400°F). Thoroughly oil the grill grates using tongs and an oil-dipped paper towel.
  5. Remove salmon from marinade, letting excess drip off. Place fillets skin-side down on the grill.
  6. Grill for 4-5 minutes without moving to allow a crust to form. Flip carefully.
  7. Brush the top generously with reserved marinade. Grill for another 4-5 minutes until opaque and flaky, or until internal temperature reaches 125°F-135°F.
  8. Remove from grill and let rest for 3-5 minutes before serving with lemon wedges.

Notes

Do not over-marinate as the acid in the lemon juice can make the fish mushy if left longer than an hour. Oil the grates thoroughly to prevent sticking. Keep the skin on during grilling to protect the flesh; it can be removed after cooking. If using a gas grill, add a smoker box with wood chips for extra smoke flavor.
