Description

A creamy, cheesy, and garlicky spinach artichoke dip that’s easy to make and perfect for parties or casual get-togethers.


Ingredients

  • 8 oz (225g) cream cheese, softened
  • 10 oz (280g) frozen spinach, thawed and squeezed dry
  • 1 can (14 oz / 400g) artichoke hearts, drained and chopped
  • 1 cup (113g) shredded mozzarella cheese
  • ½ cup (50g) freshly grated Parmesan cheese
  • 2 cloves garlic, minced
  • ¼ cup (60ml) mayonnaise
  • 1 tablespoon (15ml) lemon juice (optional)
  • Salt to taste (start with ½ teaspoon)
  • Black pepper to taste

Instructions

  1. Thaw frozen spinach completely and squeeze out as much liquid as possible using a clean kitchen towel.
  2. Drain and chop the artichoke hearts into bite-sized pieces.
  3. In a mixing bowl, combine softened cream cheese and mayonnaise. Mix until smooth and creamy.
  4. Add minced garlic, lemon juice, salt, and pepper to the cream cheese mixture and mix well. Taste and adjust seasoning if needed.
  5. Fold in chopped artichokes, squeezed spinach, shredded mozzarella, and grated Parmesan. Mix until evenly combined.
  6. Preheat oven to 375°F (190°C). Transfer the mixture to a 1-quart baking dish and spread evenly.
  7. Bake uncovered for 25-30 minutes until the top is golden and bubbly.
  8. Let the dip cool for 5 minutes before serving. Serve warm with pita chips, toasted baguette slices, or fresh veggies.
