A creamy, spiced, and comforting cold brew coffee drink made with real pumpkin puree and homemade brown sugar syrup. It tastes like pumpkin pie in liquid form and is ready in just 5 minutes.

- For the Pumpkin Brown Sugar Syrup:
- ½ cup (100g) dark brown sugar
- ½ cup (120ml) water
- 2 tablespoons (30g) 100% pure pumpkin puree
- 1 teaspoon pumpkin pie spice
- ½ teaspoon cinnamon
- For the Drink Assembly:
- 2 cups (480ml) cold brew coffee
- ½ cup (120ml) milk of choice (whole milk, oat milk, or soy milk)
- Ice cubes
- Whipped cream (optional)
- Extra pumpkin spice for garnish (optional)
Instructions
- In a small saucepan, combine brown sugar, water, pumpkin puree, pumpkin pie spice, and cinnamon.
- Whisk everything together over medium heat until the mixture simmers and the sugar is completely dissolved (about 3-4 minutes). Do not let it boil vigorously.
- Remove from heat and let the syrup cool completely. For best results, cool in the fridge for at least an hour or overnight.
- Fill a large glass or mason jar to the top with ice cubes.
- Pour cold brew coffee over the ice until the glass is about ¾ full.
- Add the milk to the glass.
- Add 2-3 tablespoons of the cooled pumpkin brown sugar syrup to the glass, adjusting to taste.
- Stir well with a long spoon or straw to distribute the syrup and milk evenly.
- Top with whipped cream and a sprinkle of extra pumpkin spice if desired. Serve immediately.
Notes
Ensure you use 100% pure pumpkin puree, not pumpkin pie filling. The syrup must be completely cooled before adding to the cold brew to prevent warming the coffee. The syrup can be stored in the fridge for up to two weeks.
