- 1 cup (226g) unsalted butter, softened to room temperature
- 1 cup (200g) dark brown sugar, packed
- 1 cup (200g) granulated sugar, divided (1 cup for dough, 1/2 cup for coating)
- 1 large egg, room temperature
- 1/2 cup (120ml) molasses (blackstrap or unsulphured)
- 3 cups (375g) all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 2 teaspoons ground ginger
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground cloves
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon black pepper
Instructions
- Preheat your pellet grill or smoker to 325°F (160°C) and let it preheat for 15 minutes. Line two large baking sheets with parchment paper.
- In a large bowl, beat the softened butter, dark brown sugar, and 1 cup of granulated sugar together on medium-high speed for 3-4 minutes until light and fluffy.
- Add the egg and molasses to the butter mixture and beat until fully combined.
- In a separate bowl, whisk together the flour, baking soda, salt, ginger, cinnamon, cloves, nutmeg, and black pepper.
- Gradually add the dry ingredients to the wet ingredients and mix on low speed until just combined. Do not overmix.
- Cover the dough and refrigerate for at least 1 hour (or up to 24 hours).
- Preheat the smoker to 325°F again if it cooled down. Scoop dough into 1.5 tablespoon balls and roll them thoroughly in the remaining 1/2 cup granulated sugar.
- Place cookies on prepared baking sheets, leaving 2 inches between each.
- Smoke the cookies for 10-12 minutes, rotating the pans halfway through. They are done when edges are set but centers look soft.
- Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Notes
Use apple or cherry wood pellets for a mild, sweet smoke flavor. Avoid strong woods like hickory. Chill the dough thoroughly to prevent spreading. Store in an airtight container at room temperature for up to 5 days. Do not refrigerate as moisture will make them soggy.
