Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan with butter or cooking spray, or line with parchment paper with an overhang for easy removal.
  2. In a large mixing bowl, whisk together the flour, baking soda, salt, and cinnamon until evenly combined.
  3. In a separate bowl or measuring cup, whisk the sugar, vegetable oil, eggs, pumpkin puree, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and gently fold with a wooden spoon or spatula. Do not overmix; stop as soon as the flour disappears.
  5. Fold in the chocolate chips evenly. If using, fold in the chopped nuts as well.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 55-60 minutes, or until a toothpick inserted in the center comes out clean or with just melted chocolate (no raw batter). If the top browns too fast, tent loosely with foil for the last 15 minutes.
  8. Let the bread cool in the pan for 10 minutes, then transfer to a cooling rack to cool completely before slicing.
  9. Serve warm or at room temperature, optionally with butter or cream cheese.
