Instructions

  1. Prep Your Cream Cheese Filling: In a medium bowl, beat 8 oz softened cream cheese with 1/4 cup granulated sugar and 1 teaspoon vanilla extract until smooth and creamy. Set aside.
  2. Mix Dry Ingredients: In a separate bowl, whisk together 2 cups all-purpose flour, 2 teaspoons baking powder, 1/2 teaspoon baking soda, 2 teaspoons cinnamon, 1/2 teaspoon nutmeg, 1/4 teaspoon cloves, and 1/2 teaspoon salt.
  3. Combine Wet Ingredients: In a large bowl, whisk 3/4 cup granulated sugar, 1/4 cup packed brown sugar, 1/2 cup vegetable oil, 2 large eggs, 1 teaspoon vanilla extract, 1 cup pumpkin puree, and 1/4 cup milk until smooth and well combined.
  4. Blend Wet and Dry: Gradually add the dry ingredients to the wet, folding gently with a spatula just until combined. Do not overmix.
