Flan Napolitano: Budget-Friendly Caramel Dessert for One

Description

A rich, silky single-serving Latin American custard with a layer of dulce de leche and golden caramel sauce, designed to be cheap, zero-waste, and easy to make.


Ingredients

  • 2 tablespoons granulated sugar (25g)
  • 1 tablespoon water (15ml)
  • 1 large egg (approx. 50g)
  • 2 tablespoons evaporated milk (30ml)
  • 2 tablespoons condensed milk (30g)
  • 1 tablespoon caramel sauce (15g)
  • 1/2 teaspoon vanilla extract

Instructions

  1. Combine 2 tablespoons of sugar and 1 tablespoon of water in a small saucepan over medium heat. Do not stir; let the sugar melt until it turns a deep golden amber color.
  2. Immediately remove from heat and pour the caramel into the bottom of a 6-8 oz ramekin. Let it harden into a crisp disc.
  3. In a small bowl, whisk the egg, evaporated milk, condensed milk, and vanilla extract vigorously until smooth and slightly frothy.
  4. Pour the custard mixture over the hardened caramel in the ramekin.
  5. Drizzle 1 tablespoon of liquid caramel sauce into the center of the custard and gently swirl with a toothpick or knife to create a marble effect.
  6. Place the ramekin inside a larger baking dish. Pour hot water into the larger dish until it comes halfway up the side of the ramekin (water bath).
  7. Preheat oven to 350°F (175°C). Bake for 25-30 minutes until edges are set but the center still has a slight jiggle.
  8. Remove from water bath and let cool to room temperature.
  9. Refrigerate for at least 2 hours or preferably overnight to allow flavors to meld and custard to firm up.
  10. To serve, run a knife around the edge, place a plate on top, and flip quickly to release the flan with the caramel sauce on top.

Notes

Do not rush the caramel making process to avoid burning. Strain the custard mixture through a fine-mesh sieve for a smoother texture. The flan tastes better chilled the next day. Do not freeze as the texture will change.
