  • 1/2 cup (120g) full-fat small curd cottage cheese
  • 1 tablespoon unsalted butter
  • 2 tablespoons fresh chives, chopped
  • 1/2 teaspoon salt (or to taste)
  • Freshly cracked black pepper
  • 1 tablespoon heavy cream or whole milk (optional)
  • 2 tablespoons crumbled feta cheese (optional)
  • 1 cup fresh spinach (optional)
  • Hot sauce (optional)

Instructions

  1. Chop the fresh chives and set them aside. Crack the eggs into a small bowl.
  2. Add the cottage cheese to the eggs and whisk vigorously until the mixture is mostly uniform with tiny bits of cheese visible. Add a pinch of salt and pepper if desired.
  3. Place a 10-inch non-stick skillet over medium-low heat. Add the butter and let it melt until it foams but does not brown. Swirl to coat the pan.
  4. Pour the egg mixture into the pan and let it sit for about 15 seconds until the edges start to set.
  5. Using a silicone spatula, gently push the cooked edges toward the center, tilting the pan so uncooked egg flows into empty spaces. Repeat this folding motion every 30 seconds to create large, soft curds.
  6. Cook until the eggs look about 90% done, remaining slightly glossy and soft. Remove the pan from the heat immediately.
  7. Fold in the fresh chives. Taste and add more salt if needed. Serve immediately.

Notes

Low and slow heat is crucial to prevent rubbery eggs. Remove eggs from heat when they look slightly underdone as they will continue to cook from residual heat. For ultra-smooth texture, blend cottage cheese and eggs in a food processor. Do not freeze leftovers as texture becomes watery and grainy.
