  • 4 slices sharp cheddar or American cheese
  • Optional add-ins: crispy bacon, ham, sautéed spinach, avocado slices, hot sauce, garlic aioli

Instructions

  1. Crack eggs into a bowl, add salt and heavy cream, and whisk vigorously until frothy to incorporate air.
  2. Toast the bread slices until golden brown and crisp. Set aside on a plate.
  3. Place an 8-inch non-stick skillet over medium-low heat and melt the butter until foamy and fragrant, ensuring it does not brown.
  4. Pour the egg mixture into the pan. If using egg rings, place them first. Let edges set for 30 seconds, then gently push uncooked egg from edges to center.
  5. Repeat the pushing motion until eggs are mostly set but still slightly wet on top. Cover with a lid for the last minute to steam.
  6. Place a slice of cheese on top of each egg patty just before they are fully done. Use residual heat or a splash of water and lid to melt if needed.
  7. Assemble the sandwich by placing cheese (if not on egg) and the cheesy egg patty on the toasted bread. Add optional toppings like bacon or avocado.
