  • 2 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup (225g) unsalted butter, softened
  • 1 ¾ cups (350g) granulated sugar
  • 4 large eggs, room temperature
  • 2 teaspoons pure vanilla extract
  • 1 cup (240ml) whole milk, room temperature
  • ¾ cup (about 120g) rainbow sprinkles (jimmies), tossed in 1 tablespoon flour
  • 2 cups (480ml) heavy cream, cold
  • ½ cup (60g) powdered sugar
  • 1 ½ teaspoons pure vanilla extract (for frosting)
  • Pinch of salt (for frosting)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two 8-inch round cake pans or line with parchment paper.
  2. Sift together flour, baking powder, baking soda, and salt in a medium bowl.
  3. In a large bowl, cream softened butter and granulated sugar together until light and fluffy, about 3-4 minutes.
  4. Add eggs one at a time to the butter-sugar mixture, beating well after each addition. Stir in vanilla extract.
  5. Alternate adding dry ingredients and milk to the butter mixture, starting and ending with dry ingredients. Mix gently until just combined.
  6. Toss sprinkles in 1 tablespoon flour, then fold them gently into the batter with a rubber spatula.
  7. Divide batter evenly between prepared pans and smooth the tops.
  8. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  9. Cool cakes in pans for 10 minutes, then turn out onto wire racks to cool completely.
  10. Chill mixing bowl and beaters in fridge for 10 minutes.
  11. Pour cold heavy cream into chilled bowl and beat on medium-high speed until soft peaks form.
  12. Gradually add powdered sugar, vanilla extract, and a pinch of salt, then continue beating until stiff peaks form. Avoid overbeating.
  13. Place one cake layer on serving plate and spread a thick layer of frosting on top.
  14. Add second layer and cover entire cake with remaining frosting.
  15. Press rainbow sprinkles onto sides and top for decoration.
  16. Refrigerate cake for 30 minutes before serving to let frosting set, or serve immediately.

Notes

Do not overmix the batter to avoid a dense cake. Chill frosting tools for better whipped cream texture. Toss sprinkles in flour before folding to prevent sinking. Use room temperature ingredients for best results. Frost cake only when completely cooled to prevent melting. Cake layers can be baked a day ahead and wrapped tightly.
