  • 1 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 4 tablespoons unsalted butter, cubed
  • 6 cloves fresh garlic, minced
  • 1 teaspoon dried thyme
  • 1 pint cherry tomatoes
  • 2 tablespoons olive oil
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon neutral oil (for searing)
  • Optional: 1/2 teaspoon red pepper flakes
  • Optional: 1 medium shallot, minced

Instructions

  1. Pat the steak cubes completely dry with paper towels and toss with sea salt, black pepper, and garlic powder. Set aside.
  2. Heat a large cast-iron or stainless steel skillet over medium-high heat with 1 tablespoon of neutral oil until it shimmers and just starts to smoke.
  3. Add steak cubes in a single layer (cook in batches if necessary to avoid overcrowding). Sear for 1-2 minutes per side until browned but still pink inside. Remove steak to a plate.
  4. Reduce heat to medium. Add cherry tomatoes to the same pan with the leftover beef juices. Cook undisturbed for 2 minutes until skins blister, then stir and cook 1-2 more minutes until slightly burst. Remove tomatoes to the plate with the steak.
  5. Reduce heat to low. Add butter to the pan. Once melted, add minced garlic and dried thyme. Stir constantly for 30-60 seconds until fragrant but not browned.
  6. Return steak and tomatoes to the pan. Toss gently in the garlic butter sauce for 30 seconds to coat and heat through.
  7. Remove from heat, sprinkle with fresh parsley, and serve immediately.

Notes

Do not overcrowd the pan to ensure proper searing. Pat steak dry to prevent steaming. Use high heat for searing and low heat for the garlic butter to prevent burning. This recipe does not freeze well; store leftovers in the fridge for up to 3 days and reheat gently in a skillet.
