Description
A simple, crispy, and flavorful side dish featuring roasted Brussels sprouts tossed with garlic, Parmesan cheese, and lemon juice. Perfect for quick weeknights or holiday dinners.
Ingredients
- 1 pound (450g) fresh Brussels sprouts, trimmed and halved
- 3 tablespoons (45ml) extra virgin olive oil
- 4 cloves garlic, minced (about 1 tablespoon)
- ½ cup (50g) freshly grated Parmesan cheese
- 1 tablespoon (15ml) fresh lemon juice
- Salt, to taste
- Black pepper, to taste
- Optional: ¼ teaspoon red pepper flakes
- Optional: 2 tablespoons fresh parsley, chopped
Instructions
- Trim off the tough ends of each Brussels sprout and remove any yellow or damaged outer leaves. Slice each sprout in half lengthwise.
- In a large mixing bowl, combine the halved Brussels sprouts with olive oil, minced garlic, salt, and black pepper. Toss until each sprout is well coated.
- Spread the sprouts cut-side down in a single layer on a rimmed baking sheet. Roast in a preheated 400°F (200°C) oven for 20-25 minutes, flipping halfway through at about 12 minutes.
- Remove the baking sheet from the oven and sprinkle the freshly grated Parmesan evenly over the sprouts. Return to the oven and roast for an additional 3-4 minutes until the cheese melts and forms a crispy crust.
- Drizzle lemon juice over the roasted sprouts and toss gently. If using, sprinkle with red pepper flakes and chopped parsley.
- Serve immediately while warm and crispy.
Notes
[‘Do not overcrowd the pan to avoid steaming and soggy sprouts.’, ‘Use fresh garlic and freshly grated Parmesan for best flavor and texture.’, ‘Flip sprouts halfway through roasting for even caramelization.’, ‘Add red pepper flakes for a subtle heat if desired.’, ‘To make ahead, roast without Parmesan, cool, refrigerate, then add cheese and finish roasting before serving.’, ‘For vegan version, omit Parmesan and use nutritional yeast instead.’, ‘Reheat leftovers in a 350°F oven for about 8 minutes to restore crispiness; avoid microwave to prevent sogginess.’]
