  • ½ cup (60g) super-fine almond flour
  • 2 large eggs
  • 3 cloves garlic, minced
  • ½ cup fresh herbs, chopped (mix of dill and parsley)
  • ¼ cup feta cheese, crumbled (optional)
  • 2 stalks green onion, sliced
  • Salt and black pepper to taste
  • Olive oil or avocado oil for frying
  • 1 cup Greek yogurt (for dip)
  • 1 tablespoon fresh lemon juice (for dip)
  • 1 clove garlic, minced or grated (for dip)
  • 1 teaspoon dried dill (for dip)
  • ¼ teaspoon salt (for dip)
  • 12 tablespoons water (for dip)

Instructions

  1. Wash zucchini and trim ends. Grate into a large bowl using the large holes of a box grater.
  2. Squeeze the grated zucchini tightly by hand or using a clean kitchen towel to remove excess water. Repeat until no liquid remains. You should have about 1.5 cups of dry, packed zucchini.
  3. In a large mixing bowl, combine the squeezed zucchini, eggs, almond flour, minced garlic, chopped herbs, feta cheese, and green onions. Season with salt and pepper. Mix until well combined.
  4. Heat a cast iron skillet or non-stick pan over medium heat. Add enough oil to coat the bottom generously (about 2 tablespoons). Wait until the oil shimmers.
  5. Drop small mounds of the mixture into the skillet, flattening slightly with the back of a spoon. Do not overcrowd the pan; cook in batches if necessary.
  6. Fry for 3-4 minutes on the first side until golden brown and crispy. Flip carefully and cook for another 2-3 minutes on the other side until cooked through.
  7. Transfer cooked fritters to a plate lined with paper towels to drain excess oil.
  8. While fritters are frying, whisk together Greek yogurt, lemon juice, minced garlic, dried dill, and salt in a small bowl. Add water one tablespoon at a time to reach desired consistency.
  9. Serve fritters immediately with the garlic herb yogurt dip on the side.

Notes

Squeezing the water out of the zucchini is crucial for crispiness. Almond flour browns quickly, so keep heat at medium. The fritters can be frozen after cooking and reheated in an air fryer or skillet for best texture.
