  • 1 tablespoon (15ml) rice vinegar
  • 1 teaspoon (5ml) sesame oil
  • Black pepper, to taste
  • Optional garnish: sliced green onions and toasted sesame seeds

Instructions

  1. Prepare the glaze: In a small bowl, whisk together gochujang, honey, soy sauce, minced garlic, rice vinegar, and sesame oil until smooth and sticky. Set aside.
  2. Prep the salmon: Pat salmon fillets dry with paper towels. Season lightly with black pepper. Optionally, score the skin for crispiness.
  3. Sear the salmon (optional): Heat a non-stick or cast iron skillet over medium-high heat with a drizzle of oil. Place salmon skin-side down and sear for 3-4 minutes until crispy. Flip and cook the other side for 1-2 minutes. Skip this step to save time.
  4. Glaze and bake: Transfer salmon to a baking sheet or keep in oven-safe skillet. Brush glaze generously over each fillet. Bake in a preheated oven at 400°F (200°C) for 8-10 minutes or until salmon flakes easily. Halfway through, spoon more glaze over fillets to build a sticky, caramelized coating.
  5. Garnish and serve: Let salmon rest for 1-2 minutes after baking. Sprinkle with sliced green onions and toasted sesame seeds. Serve immediately over steamed rice, noodles, or a crisp salad.

Dry salmon thoroughly before glazing to ensure the glaze sticks well. Adjust gochujang quantity to control spice level. Watch the oven closely to prevent glaze from burning; lower temperature by 25°F if needed and extend cooking time. Extra glaze keeps well refrigerated for up to a week.
