  • 2 teaspoons Baking Powder
  • ½ teaspoon Baking Soda
  • 1 tablespoon Granulated Sugar
  • ¾ teaspoon Salt
  • 4 tablespoons (56g) Cold Unsalted Butter, cubed
  • ⅔ cup (160ml) Full-fat Buttermilk
  • 1 large Egg Yolk
  • 12 tablespoons Heavy Cream for brushing

Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, sugar, and salt until no clumps remain.
  3. Add the cold, cubed butter to the dry ingredients and work it in with a fork or fingers until the mixture resembles coarse crumbs with pea-sized butter chunks remaining.
  4. In a separate small bowl, whisk together the buttermilk and egg yolk until combined.
  5. Pour the wet ingredients into the dry ingredients and gently mix with a fork or hands until the dough comes together and is shaggy but not sticky. Do not overmix.
  6. Turn the dough out onto a lightly floured surface and gently press it into a disc about ¾-inch thick. Do not knead.
  7. Cut out four biscuits using a 2.5-inch cutter or a sharp-edged glass, pressing straight down without twisting.
  8. Place biscuits on the prepared baking sheet, leaving about an inch between them.
  9. Brush the tops with heavy cream.
  10. Bake for 12-15 minutes until tops are golden brown and bottoms are set.
  11. Let cool on the baking sheet for 5 minutes before serving.

Notes

Keep all ingredients cold for flaky layers. Do not twist the cutter when shaping biscuits to allow them to rise properly. If you don’t have buttermilk, substitute with 1 tablespoon lemon juice or vinegar plus enough whole milk to make ⅔ cup. For gluten-free, use a 1:1 gluten-free flour blend. For dairy-free, use dairy-free butter and oat milk substitute.
