Description
Juicy 80/20 ground beef patties infused with garlic and Worcestershire sauce, grilled to perfection and topped with deeply caramelized, sweet onions on toasted brioche buns.

- 2 pounds (900g) ground beef (80/20 fat ratio)
- 2 large yellow onions (about 400g), diced
- 3 cloves garlic, minced
- 1 tablespoon Worcestershire sauce
- 1 teaspoon smoked paprika
- Kosher salt and black pepper
- 8–12 brioche buns
- 4 large yellow onions (about 800g), thinly sliced
- 4 tablespoons (60g) unsalted butter
- 2 tablespoons olive oil
- 1 teaspoon sugar
- 1 tablespoon balsamic vinegar
- 2 sprigs fresh thyme (or 1 teaspoon dried thyme)
Instructions
- Slice the 4 large onions thinly. Heat butter and olive oil in a large cast-iron skillet over medium heat. Add onions and a pinch of salt, cooking for 15 minutes until softened.
- Reduce heat to medium-low. Stir occasionally for 20-25 minutes until onions are dark brown, jammy, and sweet. Stir in sugar, thyme, and balsamic vinegar in the last 5 minutes. Remove from heat.
- In a large bowl, gently combine ground beef, minced garlic, diced yellow onions, Worcestershire sauce, smoked paprika, salt, and pepper. Do not overmix.
- Form mixture into 8 large patties, making a slight indent in the center of each. Refrigerate for at least 15 minutes.
- Preheat grill to medium-high heat (400°F / 200°C). Clean and oil the grates.
- Grill patties for 5-6 minutes on the first side. Flip and grill for another 4-5 minutes for medium-rare (internal temp 130-135°F).
- Toast brioche buns cut-side down on the grill for the last minute of cooking.
- Let burgers rest for 3-5 minutes. Assemble by placing patty on bottom bun, topping with caramelized onions, and adding other desired toppings.
- Serve immediately.
Notes
Keep beef cold until grilling to prevent fat from melting too quickly. Do not press down on burgers while cooking to retain juices. Caramelized onions can be made hours in advance. For gluten-free, serve in lettuce wraps or use gluten-free buns.
