Ingredients

  • 810 large fresh jalapeno peppers
  • 8 oz cream cheese, softened to room temperature
  • 1 cup shredded sharp or medium cheddar cheese
  • 810 slices American or mild cheddar cheese (for wrapping)
  • 810 strips thick-cut bacon, cooked until crisp (optional, for bacon-wrapped version)
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 1/4 cup chopped green onions (optional)
  • Cooking spray
  • Googly eyes or black sesame seeds (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper and lightly grease it.
  2. Wear gloves and slice jalapenos in half lengthwise. Scrape out seeds and white membranes using a small spoon.
  3. In a small bowl, mix softened cream cheese, shredded cheddar, garlic powder, onion powder, salt, pepper, and green onions until smooth.
  4. Stuff each jalapeno half with the cheese mixture, smoothing the top.
  5. Cut cheese slices into 1/2 inch strips. Wrap strips around each stuffed jalapeno, starting from the bottom and overlapping slightly, leaving a gap at the top for the head.
  6. For the bacon version, wrap a strip of cooked bacon around each stuffed jalapeno and secure with a toothpick.
  7. Press googly eyes onto the top of the mummies before baking (or after, if using bacon).
  8. Bake for 15-20 minutes until cheese is melted and bubbly (or 10-12 minutes for bacon-wrapped versions).
  9. Let cool for 5 minutes before serving.

Notes

Wear gloves when handling jalapenos to avoid skin irritation. Ensure cream cheese is at room temperature for a smooth filling. For less spice, remove all seeds and membranes. These can be prepped up to 24 hours in advance and refrigerated.
