Ingredients
- 1 pound ground beef (80/20 preferred)
- 3 medium russet potatoes, diced (about 600g / 1.3 lbs)
- 1 medium yellow onion, diced (about 150g / 5.3 oz)
- 3 cloves garlic, minced (about 1 tablespoon)
- 4 cups low-sodium beef broth (960ml / 4 cups)
- 1 cup whole milk (240ml / 1 cup)
- 2 cups shredded sharp cheddar cheese (about 200g / 7 oz)
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
- Salt and freshly cracked black pepper to taste
- Optional toppings: chopped green onions, crispy bacon bits, sour cream
Instructions
- Heat a large pot over medium-high heat and add the ground beef. Break it up and cook until browned but not dried out, about 6-8 minutes. Drain excess fat if necessary.
- Push the beef to one side of the pot. Add diced onion and cook until soft and translucent, about 3 minutes. Add minced garlic and cook for another 30 seconds until fragrant.
- Stir in diced potatoes and tomato paste, coating evenly. Pour in beef broth and Worcestershire sauce. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15 minutes.
- Lower heat to medium-low. Gradually add milk, stirring gently. Add shredded cheddar cheese a handful at a time, stirring until melted and smooth.
- Taste and season with salt and pepper as needed. Serve hot with optional toppings like green onions, bacon bits, or sour cream.
Notes
Use low-sodium broth to control salt levels. Add cheese off the heat to avoid graininess. Dice potatoes uniformly for even cooking. Simmer gently to keep flavors melded and potatoes intact. For thicker soup, mash a few potatoes before adding cheese. Ground turkey can be substituted for beef with added seasoning and fat. Add veggies like corn or bell peppers for variation.
