  • 2 cups shredded rotisserie chicken (about 300g)
  • ½ cup buffalo sauce (e.g., Frank’s RedHot)
  • 2 tablespoons unsalted butter, melted
  • 4 large flour tortillas (burrito size)
  • 1 cup shredded sharp cheddar cheese
  • ¼ cup chopped celery leaves (or fresh parsley/green onions)
  • ¼ cup ranch dressing or blue cheese dressing
  • Optional: ½ cup cool cucumber slices, 1 medium avocado slices, 2 tablespoons chopped cilantro

Instructions

  1. Shred the rotisserie chicken, discarding skin and bones. If using cooked breasts, chop into bite-sized pieces.
  2. In a small bowl, whisk together the buffalo sauce and melted butter until smooth.
  3. Heat a medium skillet over medium heat. Add the shredded chicken and pour the buffalo sauce mixture over it. Stir to coat.
  4. Heat the chicken through for 2-3 minutes, stirring occasionally, until hot and glossy. Do not overcook.
  5. While chicken heats, warm the tortillas in a dry skillet for 30 seconds per side or microwave for 15-20 seconds wrapped in a damp paper towel.
  6. Place a warm tortilla on a plate. Spoon buffalo chicken down the center.
  7. Sprinkle shredded cheddar cheese over the chicken.
  8. Drizzle with ranch or blue cheese dressing and add optional veggies like cucumber or avocado.
  9. Fold the bottom of the tortilla up over the filling, fold in the sides, and roll tightly.
  10. Cut in half diagonally and serve immediately.

Notes

Warm tortillas are crucial to prevent tearing. Shred your own cheese for better melting. If the sauce is too thin, add more butter or cream cheese. For a lighter version, use lettuce wraps and skip the cheese.
