Ingredients

  • 1 cup water
  • 1/2 cup unsalted butter, cut into chunks
  • 1 tablespoon granulated sugar
  • 1/2 teaspoon salt
  • 1 cup all-purpose flour
  • 1 large egg, room temperature
  • 23 cups vegetable oil (for frying)
  • 1/2 cup granulated sugar (for coating)
  • 12 teaspoons ground cinnamon

Instructions

  1. In a large saucepan, combine water, butter, sugar, and salt. Bring to a rolling boil over medium-high heat, then immediately remove from heat.
  2. Add flour all at once and stir vigorously until the dough forms a smooth ball and pulls away from the sides of the pan (about 1-2 minutes). Transfer to a mixing bowl and let cool for 5 minutes.
  3. Beat the egg into the warm dough until smooth, glossy, and pipeable.
  4. Fill a piping bag fitted with a large star tip with the dough. Pipe 6-8 inch strips onto a parchment-lined baking sheet.
  5. Heat vegetable oil in a large skillet or Dutch oven to 375°F (190°C).
  6. Fry churros in batches for 2-3 minutes, turning occasionally, until golden brown and crispy. Remove with a slotted spoon and drain on a wire rack lined with paper towels.
  7. While still warm, roll the churros in the mixture of granulated sugar and cinnamon until fully coated.
  8. Serve immediately with chocolate dip if desired.

Notes

Ensure oil temperature stays between 350°F and 400°F to prevent greasy or burnt churros. Let dough cool slightly before adding egg to prevent curdling. For extra crunch, double coat in cinnamon sugar. Uncooked dough can be frozen and fried straight from the freezer.
