Description
A meditative, self-care treat that transforms humble, overripe figs into a glossy, complex jam using aged balsamic vinegar and fresh thyme. It requires low effort and offers a sophisticated flavor profile perfect for toast, cheese boards, or glazes.
Ingredients
- 2 pounds (900g) fresh figs, hulled and quartered
- 1 ½ cups (300g) granulated sugar
- ¼ cup (60ml) aged balsamic vinegar
- 1 tablespoon (15ml) fresh lemon juice
- 2 tablespoons packed fresh thyme leaves
- 1 teaspoon vanilla extract
- ½ teaspoon kosher salt
Instructions
- Rinse figs gently, pat dry, remove stems, and cut into quarters. Place in a heavy-bottomed pot.
- Sprinkle sugar over figs, add lemon juice and salt. Stir to coat and let sit for 15-20 minutes to macerate.
- Place pot over medium-low heat and bring to a gentle simmer. Stir occasionally, scraping the bottom to prevent sticking.
- As figs break down, mash about half of them with a wooden spoon or potato masher. Stir in thyme leaves and vanilla extract.
- Once the mixture has thickened slightly and figs are soft (about 20 minutes), stir in the aged balsamic vinegar.
- Continue to simmer for another 5-10 minutes until the jam coats the back of a spoon and passes the ‘sheeting’ test.
- Check for doneness: Jam is ready at 220°F (104°C) or when a drop on a cold plate wrinkles and doesn’t run back together.
- Remove from heat, skim off foam, and let cool for 5 minutes.
- Ladle hot jam into sterilized glass jars, leaving ¼ inch headspace. Wipe rims clean and seal tightly.
- For long-term storage, process jars in a boiling water bath for 10 minutes. Otherwise, store in the refrigerator.
Notes
Use fresh figs for best aroma; frozen figs can be substituted if thawed and drained. Do not use cheap balsamic glaze; aged balsamic (5-12 years) is essential for flavor. Macerating the figs with sugar reduces cooking time and preserves fresh flavor. If the jam is too thick, whisk in warm water or apple cider vinegar to thin. Store in the fridge for up to 6 months.
