- 3 cups (375g) All-Purpose Flour
- 1 tsp Baking Powder
- 1 tsp Baking Soda
- 1 tsp Salt
- 1 cup (225g) Unsalted Butter, softened
- 2 cups (400g) Granulated Sugar
- 4 large Eggs, room temperature
- 2 tsp Vanilla Extract
- 1 ½ cups (360ml) Buttermilk
- 1 cup (100g) Funfetti Sprinkles
- 2 cups (480ml) Heavy Cream, cold
- 1 cup (120g) Confectioners’ Sugar, sifted
- 4 oz (115g) Cream Cheese, softened
- 1 tsp Vanilla Bean Paste or Extract
- ¼ tsp Salt
Instructions
- Preheat oven to 350°F (175°C). Grease two 9-inch round cake pans and line bottoms with parchment paper.
- In a large bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
- In another large bowl, beat softened butter and granulated sugar on medium-high speed for 3-4 minutes until pale and fluffy.
- Add eggs one at a time, beating well after each addition. Scrape down bowl sides. Add vanilla extract.
- Reduce mixer to low speed. Add dry ingredients in three parts, alternating with buttermilk in two parts. Start and end with dry ingredients. Mix just until combined.
- Gently fold in funfetti sprinkles using a rubber spatula.
- Pour batter evenly into prepared pans. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
- Let cakes cool in pans for 10 minutes, then turn out onto a wire rack to cool completely.
- In a chilled bowl, beat cold heavy cream, cream cheese, confectioners’ sugar, vanilla, and salt on medium-high speed until stiff peaks form (5-7 minutes).
- Place one cake layer on serving plate. Spread a generous layer of frosting on top. Add second layer. Frost top and sides. Press sprinkles onto sides if desired.
Notes
Ensure all ingredients are at room temperature before starting. Do not overmix the batter once flour is added. Chill the mixing bowl and beaters for 10 minutes before making the frosting to ensure it whips properly. Store leftovers in an airtight container in the fridge for up to 4 days.
