Description
Soft, slightly sweet homemade pumpkin bagels that are perfect for a fun, hands-on weekend activity with kids. These bagels are made with real pumpkin puree and served with a fluffy whipped maple cinnamon cream cheese.
Ingredients
Scale
- 3 to 3.5 cups all-purpose flour (375-440g)
- 1/2 cup pumpkin puree (120g)
- 1 packet active dry yeast (2.25 tsp)
- 1/2 cup warm water (120ml)
- 2 tablespoons granulated sugar
- 1 teaspoon ground cinnamon
- 1 teaspoon salt
- 2 tablespoons melted butter
- 2 tablespoons baking soda (for boiling water)
- 6 cups water (for boiling)
- 8 oz cream cheese, softened (225g)
- 2 tablespoons maple syrup
- 1/2 teaspoon cinnamon
- 1–2 tablespoons heavy cream
Instructions
- In a small bowl, mix warm water, sugar, and yeast. Let sit for 5-10 minutes until foamy.
- In a large bowl or mixer, combine 2 cups flour, pumpkin puree, cinnamon, salt, and melted butter. Mix until shaggy.
- Add the yeast mixture and remaining flour. Knead for 8-10 minutes until smooth and elastic.
- Place dough in an oiled bowl, cover, and let rise for 30-45 minutes until doubled.
- Punch down dough and divide into 8 equal pieces. Shape each into a ring with a 1.5-inch hole.
- Place shaped bagels on a parchment-lined baking sheet and let rise for 15 minutes.
- Bring a large pot of water to a boil and add baking soda. Boil bagels for 1 minute per side.
- Remove bagels with a slotted spoon and place back on the baking sheet.
- Preheat oven to 400°F (200°C). Brush bagels with water and bake for 15-20 minutes until golden brown.
- While bagels bake, beat cream cheese, maple syrup, cinnamon, and heavy cream until fluffy.
Notes
Ensure yeast is active before starting. Do not use pumpkin pie filling; use 100% pure pumpkin puree. Let bagels cool for at least 10 minutes before slicing to prevent gummy texture. Keep children away from boiling water.
